Most visitors to Cancun never leave the Hotel Zone, which means most visitors never see Cancun. El Centro — downtown Cancun — is where the city actually lives: a grid of low-slung buildings, taco stands on every corner, and Mercado 28, a sprawling market where the air smells of leather, spices, and the particular sweetness of handmade vanilla.
